Ingredients

  • 2 1/2 c. flour, sifted
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 bananas, mashed
  • 3 tsp. vanilla
  • 3 beaten eggs
  • 1 c. oil
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 c. zucchini, grated (do not peel)
  • 1 c. chopped nuts or raisins or part of both

Directions

    Sift dry ingredients; set aside.

    Blend eggs, oil and sugars. Add dry ingredients; mix lightly until well blended.

    Add zucchini, bananas, nuts and vanilla; mix well.

    Spread into 2 greased loaf pans (9 x 5 x 3-inch) and bake for 1 hour and 15 minutes, or 3 greased loaf pans (7 7/8 x 3 7/8 x 2 1/2-inch) for 1 hour.

    Bake at 350° (or 325° if glass pans).
