Zucchini Bread

Ingredients

  • 3 large eggs
  • 1 c. oil
  • 2 c. sugar
  • 1/2 tsp. cinnamon
  • 3 c. self-rising flour
  • 2 c. zucchini
  • 2 tsp. vanilla
  • 1 c. nuts

Directions

    Beat eggs to foamy. Beat in oil. Add about half of the dry ingredients and half of the zucchini. Beat until blended.

    Add rest of the dry ingredients and zucchini. Add vanilla and nuts. Mix well.

    Pour into 2 loaf pans. Bake at 325° for 1 hour.
