  • 3 eggs
  • 2 c. grated zucchini
  • 3 tsp. vanilla
  • 1 c. cooking oil
  • 2 c. sugar
  • 1 c. chopped nuts
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 3 tsp. cinnamon

Directions

    Beat eggs until light and foamy.

    Add oil, sugar, zucchini and vanilla.

    Mix lightly, then add nuts and dry ingredients just until blended.

    Bake at 325° for 1 hour in greased, floured pans. Remove from pans to prevent sticking.

    Cool on racks.

    Makes 2 loaves.
