Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3 tsp. cinnamon
  • 1/4 tsp. allspice
  • 3 eggs
  • 1 1/2 c. sugar
  • 3/4 c. vegetable oil
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. almond extract
  • 2 c. lightly packed, coarsely grated zucchini
  • 1 c. raisins

    Preheat oven to 350°.

    Sift flour, baking powder, soda, salt and spices together.

    In a large bowl, beat the eggs with sugar, oil and flavorings.

    Stir in zucchini and raisins.

    By hand, stir in dry ingredients just until blended.

    Divide batter into 2 greased 8 x 4-inch loaf pans or 24 muffins.

    Bake for 50 to 60 minutes.
