- 4 c. shredded zucchini (loosely, don't drain)
- 3 c. all-purpose flour
- 2 1/2 c. sugar
- 1 1/4 c. vegetable oil
- 4 eggs, beaten
- 1 Tbsp. plus 1 tsp. vanilla
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking soda
- 1 tsp. ground cloves
- 1/2 tsp. baking powder
- 1 c. chopped nuts
Directions

1Heat oven to 325°.

2Generously spray bottoms of 2 loaf pans (9 x 5 x 3-inch) or 6 little loaf pans (3-inch).

3Beat all ingredients on low speed 1 minute.

4Beat medium 1 minute.

5Pour into pans. Bake 2 large loaf pans 1 hour or 6 mini loaves 30 minutes or until toothpick comes out clean.

6Cool 10 minutes.

7Remove from pans. Cool completely before slicing.
