- 3 eggs
- 1 c. salad oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. shredded zucchini
- 1 (8 oz.) can crushed pineapple, drained
- 1 c. currants, raisins or nuts
- 3 c. flour
- 1/4 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
Directions

1Set oven to 350°. Grease and flour 2 loaf pans. In a large mixing bowl, add ingredients one at a time. Mix or beat well after each addition. Pour into pans and bake for 45 to 60 minutes or until a pick inserted in center comes out clean. Let cool 5 minutes before removing from pan. Makes 2 loaves.
