Ingredients

  • 1 c. vegetable oil
  • 2 c. sugar
  • 3 eggs
  • 1 (8 oz.) can crushed pineapple, drained
  • 3 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 2 c. grated raw zucchini
  • 3/4 c. chopped nuts
  • 1 tsp. ground cloves

Directions

    Mix dry ingredients, spices and nuts; set aside.

    Beat eggs, sugar, oil and vanilla until creamy.

    Add zucchini and pineapple, mixing well.

    Stir in dry ingredients, just until moistened.

    Pour batter into 2 greased and floured 5 x 9-inch loaf pans and bake at 350° for about 1 hour.

    Cool 10 minutes in pans, then turn on racks and cool.
