Ingredients

  • 3 c. flour, sifted plus 1 tsp. for dusting pan
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp. allspice
  • 6 egg whites or 3/4 c. egg substitute
  • 1 1/2 c. sugar
  • 3/4 c. vegetable oil
  • 1 1/2 tsp. vanilla extract
  • 2 c. lightly packed, coarsely grated zucchini, washed, ends removed and not peeled
  • 1 c. raisins
  • nonstick vegetable spray

Directions

    Preheat oven to 350°.

    Sift 3 cups flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice together in a medium-sized bowl.

    In a separate bowl, beat the egg whites or egg substitute with the sugar, oil and vanilla.

    Stir zucchini and raisins into egg mixture.

    By hand, stir in the flour mixture just until flour is blended.

    Spray two 8 x 4-inch loaf pans with nonstick spray.

    Bake until done.
