Ingredients

  • 1 c. chopped walnuts
  • 2 c. sugar
  • 3 1/2 c. flour
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 2 c. grated zucchini (unpared)
  • 1 tsp. vanilla
  • 4 eggs
  • 1 c. oil
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 1 c. raisins

Directions

    Beat eggs, sugar and oil.

    Add dry ingredients alternately with zucchini.

    Stir in raisins, nuts and vanilla.

    Pour into 2 greased and floured loaf pans.

    Bake at 350° for 55 to 60 minutes. Let stand 10 minutes; turn out onto wire racks to cool.

    Freezes well.

    Makes 2 loaves.
