- 2 small unpeeled zucchinis, grated
- 3 eggs
- 1 c. vegetable oil
- 2 c. sugar
- 2 Tbsp. vanilla
- 3 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 Tbsp. cinnamon
- 1/4 tsp. baking powder
Directions

1In a large bowl, beat eggs on medium speed until light and fluffy.

2Add oil, sugar, zucchini and vanilla.

3Beat well.

4Sift remaining ingredients together.

5Add to zucchini mixture and blend well.

6Pour batter into two (9 x 5 x 3-inch) greased and floured loaf pans.

7Bake at 350° for 50 to 60 minutes.

8Cool loaves in pan on wire rack for 30 minutes before removing to complete cooling.
