  • 2 small unpeeled zucchinis, grated
  • 3 eggs
  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 Tbsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 1/4 tsp. baking powder

Directions

    In a large bowl, beat eggs on medium speed until light and fluffy.

    Add oil, sugar, zucchini and vanilla.

    Beat well.

    Sift remaining ingredients together.

    Add to zucchini mixture and blend well.

    Pour batter into two (9 x 5 x 3-inch) greased and floured loaf pans.

    Bake at 350° for 50 to 60 minutes.

    Cool loaves in pan on wire rack for 30 minutes before removing to complete cooling.
