- 3 whole Eggs
- 1/4 cups Vegetable Oil
- 1/2 cups Applesauce (unsweetened)
- 2 teaspoons Vanilla Extract
- 1-2/3 cup Brown Sugar
- 2 cups Grated Zucchini
- 3 cups Whole Wheat Flour
- 1 Tablespoon Cinnamon
- 1-1/2 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1/2 cups Raisins
- 1/2 cups Chopped Walnuts
Directions

1In a large bowl, beat the eggs. Add oil, applesauce, vanilla, brown sugar and zucchini. Stir well to combine. Blend in flour, cinnamon, baking powder, baking soda and salt. Stir in raisins and walnuts.

2Grease and flour two loaf pans. Evenly pour batter into prepared pans. Bake at 325 F for one hour. Cool for 10 minutes in pans, then turn out onto racks and cool completely. Each loaf makes 16 pieces.

3Excellent for freezing.

4You can substitute other nuts or chocolate chips for the raisins and walnuts, or leave them out entirely! You can add up to 2 additional cups of grated zucchini to this recipe, depending on your mood. If using frozen grated zucchini, drain it well.
