- 3 eggs
- 1 12 cups sugar
- 2 teaspoons vanilla
- 12 cup vegetable oil
- 2 cups grated and drained zucchini
- 2 cups flour
- 14 teaspoon baking powder
- 2 teaspoons baking soda
- 3 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup raisins
- 1 cup chopped walnuts
Directions

1In large bowl, combine eggs, sugar, vanilla, oil, and zucchini; beat well.

2In small bowl, sift together flour, powder, soda, cinnamon, and salt.

3Add to zucchini and mix well.

4Stir in raisins and walnuts.

5Pour into 2 greased and floured loaf pans.

6Don't overfill.

7Bake at 375 F for about 1 hour or until toothpick comes out clean.

8Cool 15 minute and then turn out onto racks to cook completely.

9Freezes well.
