  • 3 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 2 cups shredded unpeeled zucchini
  • 1 cup chopped nuts, your choice
  • 1 teaspoon pure vanilla extract

Directions

    Preheat oven to 350 degrees F. Lightly grease and flour two 9 by 5-inch loaf pans.

    In a large bowl cream the eggs, sugar and vegetable oil until light and fluffy.

    Mix in flour, salt, cinnamon, baking powder, and baking soda.

    Add nutmeg, zucchini, nuts and vanilla extract; stir until well blended.

    Pour batter into prepared loaf pans and bake 55 to 60 mins or until a toothpick inserted in center comes out clean.

    Remove from oven and cool on wire racks 10 mins; remove from pans.

    Cool completely before slicing.
