  • 2 c. sugar
  • 3 c. flour
  • 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 c. oil
  • 1 tsp. vanilla
  • 3 eggs, beaten
  • 2 c. grated raw zucchini, drained
  • 1/2 c. chopped nuts

Directions

    Grease two loaf pans (9 x 5-inch).

    Place all dry ingredients in a bowl.

    Make a well in center and add oil, vanilla and eggs. Mix with a spoon.

    Add zucchini and nuts.

    Pour into pans and bake at 325° for 60 to 65 minutes.

    Cool before removing from pans.
