  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 3 tsp. cinnamon
  • 1 c. coconut
  • 3 eggs, slightly beaten
  • 2 c. zucchini (raw), grated
  • 3 c. self-rising flour
  • 1 c. chopped nuts

Directions

    Combine oil, eggs, sugar, zucchini and vanilla.

    Blend well. Stir in flour and spice.

    Do not beat.

    Stir in nuts and coconut. Spoon batter in 2 well-greased loaf pans.

    Bake at 325° for 1 1/2 hours or until done (ovens vary so keep track after 1 hour).
