  • 3 eggs
  • 1 1/2 c. sugar
  • 1 c. oil
  • 2 tsp. vanilla
  • 2 c. shredded, unpeeled zucchini
  • 3 c. flour
  • 3/4 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. chopped nuts

Directions

    Preheat oven for 350°.

    Beat eggs with sugar, oil and vanilla. Stir in zucchini; mix well.

    Mix together dry ingredients and add to zucchini mixture.

    Stir until blended.

    Spoon mixture into two greased 5 x 9-inch loaf pans.

    Bake at 350° for 50 to 60 minutes. Cool in pan for 10 minutes, then remove to wire racks to cool completely.
