- 3 eggs
- 1 c. salad oil
- 2 1/2 c. sugar
- 2 c. grated raw zucchini
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 3 c. unsifted flour
- 1 c. chopped walnuts
Directions

1In bowl, beat eggs until foamy; gradually beat in oil and sugar.

2Add grated zucchini, cinnamon, salt, baking soda and baking powder, mixing well.

3Gradually blend in flour, mixing well after each addition.

4Fold in chopped walnuts.

5Pour into greased Bundt pan (3-quart) and bake at 350° for one hour, or until cake tests done and starts to leave sides of pan.

6Cool in pan for ten minutes.

7Loosen edge.

8Shake loose and turn cake out on rack to cool.

9Store in covered tin or wrapped in foil.
