  • 3 eggs
  • 1 c. cooking oil
  • 2 c. sugar
  • 1 tsp. vanilla extract
  • 2 c. raw zucchini, grated and drained
  • 3 c. all-purpose flour, sifted
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 1/2 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/2 c. nuts, chopped

    Beat eggs until foamy.

    Add oil, sugar and vanilla.

    Mix well; stir in grated zucchini.

    Sift flour with salt, soda, cinnamon and baking powder.

    Add to egg mixture and blend well.

    Fold in nuts. Pour into 2 greased 9 x 5 x 3-inch loaf pans and bake in a preheated oven at 325° for 1 hour.
