  • 1 c. vegetable oil
  • 1 Tbsp. vanilla
  • 1 tsp. walnut extract
  • 2 c. all-purpose flour
  • 1 Tbsp. cinnamon
  • 1 tsp. nutmeg
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. grated zucchini (2 large zucchini)
  • 3/4 c. chopped walnuts (optional)
