  • 1 c. walnuts
  • 2 c. sugar
  • 3 1/2 c. unsifted all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 tsp. baking powder
  • 2 c. grated raw zucchini, not peeled
  • 1 c. raisins
  • 1 tsp. vanilla
  • 4 eggs
  • 1 c. vegetable oil

    Chop walnuts into medium-sized pieces.

    Beat eggs; beat in sugar.

    Then add oil and vanilla.

    Combine dry ingredients and add to the first mixture, alternating with zucchini.

    Stir in raisins and walnuts.

    Divide mixture into 2 greased and floured 9 x 5 x 2-inch pans.

    Bake at 350° for about 55 minutes or until done. The loaves freeze well.
