Zucchini Bread

  • 5 c. flour
  • 1/4 pkg. dry yeast
  • 3 or 4 zucchini
  • 2 Tbsp. salt
  • 1 1/4 c. water
  • 1 egg yolk, beaten
  • 1 c. walnuts, chopped

Directions

    Wash and cut the ends off the zucchini.

    Grate the zucchini in a large bowl.

    Then sprinkle the salt onto the zucchini.

    Let it sit for 30 minutes.

    When the time is up, squeeze the zucchini and the salt together.

    Mix the yeast and tepid water in a different bowl and add flour.

    Mix in the zucchini mixture and let the batter rise in a warm place.

    After dough has risen, fold in the chopped nuts and pour the egg yolk on top of the dough.

    Bake in 425° oven for 40 or 45 minutes.
