Ingredients

  • 3 beaten eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 1 Tbsp. vanilla
  • 2 c. loosely packed, no seed, coarsely grated zucchini
  • 2 c. flour
  • 1 Tbsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 1 c. chopped walnuts

Directions

    Beat eggs until frothy.

    Add sugar, oil and vanilla; beat until thick and lemon colored.

    Stir in zucchini.

    Sift flour with cinnamon, soda, salt and baking powder.

    Add to zucchini mixture. Fold in walnuts.

    Pour mixture into 2 oiled and floured loaf pans. Bake in preheated 350° oven for 1 hour or until a tester comes out clean.

    Let cool in pans for 10 minutes.

    Invert loaves on rack and cool completely.
