Ingredients
- 3 beaten eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 Tbsp. vanilla
- 2 c. loosely packed, no seed, coarsely grated zucchini
- 2 c. flour
- 1 Tbsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 1 c. chopped walnuts
Directions

1Beat eggs until frothy.

2Add sugar, oil and vanilla; beat until thick and lemon colored.

3Stir in zucchini.

4Sift flour with cinnamon, soda, salt and baking powder.

5Add to zucchini mixture. Fold in walnuts.

6Pour mixture into 2 oiled and floured loaf pans. Bake in preheated 350° oven for 1 hour or until a tester comes out clean.

7Let cool in pans for 10 minutes.

8Invert loaves on rack and cool completely.
