  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 c. grated, peeled zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • 1/2 tsp. baking powder

Directions

    Beat eggs until light and foamy.

    Add oil, sugar, grated zucchini and vanilla.

    Mix lightly, but well.

    Add remaining ingredients.

    Mix until blended.

    Divide batter into two well-greased 9 x 5 x 2-inch loaf pans.

    Bake at 325° for 1 hour or until bread tests done.

    Remove from pans.

    This freezes well.
