- 3 eggs, well beaten
- 2 c. sugar
- 1 c. oil
- 1 Tbsp. vanilla
- 2 c. shredded, squeezed zucchini (2 good-sized zucchini)
- 2 c. flour
- 1 Tbsp. cinnamon
- 1 tsp. salt
- 2 tsp. baking soda
- 1 c. pecans
Directions

1Preheat oven to 350°.

2Grease and flour 3 loaf pans (medium) or 6 small loaf pans.

3Mix together eggs, sugar, oil and vanilla. Beat until lemon colored.

4Shred zucchini, salt lightly and squeeze juice out.

5Add to mixture.

6Sift together flour, cinnamon, salt and baking soda.

7Add to wet mixture and mix well. Stir in pecans.

8Pour into pans.

9Bake medium loaf pans 50 to 60 minutes and bake small loaf pans 35 minutes.
