- 1 c. vegetable oil
- 2 c. sugar
- 2 c. grated zucchini
- 3 tsp. vanilla
- 3 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 3 tsp. cinnamon
- 1 c. chopped walnuts (optional)
Directions

1Beat together the eggs, oil and sugar.

2Mix in the rest of the ingredients in order.

3Better if you sift the dry ingredients together before adding.

4Fold in the zucchini and walnuts last. Grease and flour 2 loaf pans.

5Pour in mixed bread.

6Bake at 325° for 1 hour or until a toothpick inserted comes out clean.

7Cool in pans for about 5 minutes, then turn out and finish cooling.

8Wrap in foil to store.

9Freezes well.
