  • 3 eggs, beaten
  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. self-rising flour
  • 3 tsp. cinnamon
  • 2 c. zucchini, unpeeled and coarsely grated
  • 1 c. nuts (optional)

Directions

    Combine eggs, oil, sugar and vanilla.

    Mix well.

    Combine dry ingredients and add to oil mixture, mixing well.

    Stir in grated zucchini.

    Add nuts.

    Pour into a greased and floured Bundt pan. Bake at 350° for 55 to 60 minutes.

    Allow to cool for 20 minutes before removing from pan.
