- 3 c. zucchini with skins, puree in blender
- 3 c. sugar
- 1 1/2 c. oil (Wesson)
- 4 eggs
- 3 c. flour
- 1 1/2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. chopped walnuts
Directions

1Mix squash, sugar, oil or eggs.

2Mix dry ingredients.

3Mix altogether (don't forget the nuts).

4Use two greased and floured cake pans (loaf).

5Take out of oven when pick comes out dry. Cakes will not rise too high because they are very moist.

6Bake at 300° for 1 1/2 hours.

7Makes 2 cakes.
