  • 1 1/2 c. oil
  • 3 c. sugar
  • 4 eggs
  • 3 c. ground or grated zucchini (unpeeled)
  • 3 c. flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 c. nuts
  • 1 c. raisins

    Blend and cream oil and sugar.

    Add eggs; beat after each egg is added.

    Add zucchini and mix.

    Mix flour, baking powder, baking soda, salt and cinnamon together; add to zucchini mixture and beat well.

    Fold in nuts and raisins.

    Bake in a 9 x 15-inch or 11 x 17-inch pan at 350° for approximately 1 hour.

    Cool.
