- 2 c. sugar
- 2 c. grated zucchini (rind, seeds and pulp)
- 2 c. flour
- 1/2 tsp. baking powder
- 2 tsp. soda
- 1 tsp. salt
- 3 tsp. vanilla
- 3 tsp. cinnamon
- 1 c. nuts
Directions

1Beat eggs. Add oil, sugar, zucchini, then add flour, baking powder, soda, salt, vanilla, cinnamon and nuts. Grease and flour pans. Bake in 9 x 13 pan for 35 minutes at 350°.

2You may bake in 2 loaf pans about 1 hour at 350° or five 4-inch by 8-inch loaf pans for 40 minutes or Bundt pan for 40 minutes.
