- 1 (6 oz.) pkg. chicken flavor Stove Top stuffing mix
- 1/4 c. melted butter
- 4 c. grated zucchini
- 1/4 c. chopped onion
- 1 c. grated carrot
- 1 can cream of chicken soup
- 1 c. sour cream
Directions

1In a bowl, mix the bread crumbs and seasoning packet of stuffing mix with the melted butter and stir.

2Cook zucchini and onion together in salted water for 5 minutes.

3Drain and set aside.

4Combine chicken soup, sour cream and carrots.

5Stir in the onions and zucchini.

6Put half of the stuffing mix into a greased 2-quart casserole dish.

7Pour in the zucchini mixtures and top with the remaining stuffing.

8Bake, covered, for 25 to 30 minutes at 350°.

9Remove cover for the last 5 minutes.
