Zucchini Casserole

  • 1 1/2 lb. Italian sausage
  • 2 medium zucchini, sliced
  • chopped celery and onion if desired
  • 1 1/2 c. spaghetti sauce

Directions

    Parboil sausage 10 minutes.

    Add zucchini until heated through. Pour 1/2 cup sauce into casserole dish; add drained sausage and zucchini.

    Add balance of sauce on top.

    Bake at 350° until zucchini is tender.

    Add Mozzarella cheese if desired.

    Return to oven an additional 5 minutes.

    Let stand 5 minutes before serving.
