  • 3 over-sized zucchini
  • 1 small onion, chopped
  • 4 large eggs
  • 1 c. Bisquick
  • 1/2 c. oil
  • 1/2 c. shredded sharp Cheddar cheese
  • salt and pepper to taste

Directions

    Mix eggs and oil in large mixing bowl; add salt and pepper. Add zucchini and onion; mix.

    Make sure vegetables are covered well, then add cheese.

    Gently toss again.

    Pour into 2 1/2-quart casserole, well buttered.

    Pat top with butter.

    Bake at 400° for 30 minutes, then reduce heat to 350° for 20 minutes.
