- 2 pounds zucchini, sliced thin
- 2 cups carrots, grated
- 1 small onion, grated
- 1 1/2 cup sour cream
- 1 can cream of chicken soup
- Salt and pepper
- 1 stick of butter
- 1 pkg. Pepperidge Farm herb dressing mix
Directions

1Cook zucchini until tender, drain.

2Melt butter and mix with herb dressing mix.

3Mix zucchini, carrots, onions, soup and salt and pepper.

4Place 1/2 of dressing mix in bottom of deep casserole dish.

5Pour zucchini and carrot mixture over herb mix.

6Cover with rest of herb mix.

7bake 1 hour at 350°. (Can cover with foil for 30 minutes, then uncover.)
