Zucchini Casserole

  • 2 pounds zucchini, sliced thin
  • 2 cups carrots, grated
  • 1 small onion, grated
  • 1 1/2 cup sour cream
  • 1 can cream of chicken soup
  • Salt and pepper
  • 1 stick of butter
  • 1 pkg. Pepperidge Farm herb dressing mix

Directions

    Cook zucchini until tender, drain.

    Melt butter and mix with herb dressing mix.

    Mix zucchini, carrots, onions, soup and salt and pepper.

    Place 1/2 of dressing mix in bottom of deep casserole dish.

    Pour zucchini and carrot mixture over herb mix.

    Cover with rest of herb mix.

    bake 1 hour at 350°. (Can cover with foil for 30 minutes, then uncover.)
