- 4 c. diced, unpeeled zucchini
- 3/4 c. grated carrots
- 1/2 c. chopped onion
- 1/2 c. sour cream
- 1 can cream of chicken soup
- 1 stick margarine
- 2 1/2 c. seasoned croutons
Directions

1Boil zucchini until tender.

2Saute carrots and onions in 1/2 stick margarine.

3Add 1/2 cup croutons, sour cream and soup.

4Add squash.

5Saute rest of croutons in 1/2 stick margarine.

6Top mixture with croutons.

7Bake at 350° for 25 to 40 minutes.
