- 2 to 3 medium zucchini, thinly sliced
- 2 onions, thinly sliced
- 2 to 3 chopped tomatoes
- 2 Tbsp. oil
- 1 c. shredded sharp Cheddar cheese
- 1 clove garlic, pressed (optional)
Directions

1Saute zucchini, onions and tomatoes (and garlic, if including) in oil.

2Cook over low heat until tender, stirring occasionally. Pour into casserole dish and sprinkle with shredded cheese.

3Bake 30 minutes at 350°.
