  • 1 1/2 lb. zucchini squash, chopped
  • 1 c. bread crumbs
  • 2 Tbsp. oleo
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. onion salt
  • 1/4 tsp. sugar
  • 3/4 c. jalapeno cheese, shredded

Directions

    Cook squash until nearly tender; drain.

    Add oleo, 1/2 bread crumbs, all seasonings and 1/2 cheese.

    Pour in beaten eggs. Blend and pour into greased casserole dish.

    Sprinkle top with rest of bread crumbs and cheese.

    Bake at 350° for 25 minutes.
