- 1 1/2 lb. zucchini squash, chopped
- 1 c. bread crumbs
- 2 Tbsp. oleo
- 2 eggs, beaten
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. onion salt
- 1/4 tsp. sugar
- 3/4 c. jalapeno cheese, shredded
Directions

1Cook squash until nearly tender; drain.

2Add oleo, 1/2 bread crumbs, all seasonings and 1/2 cheese.

3Pour in beaten eggs. Blend and pour into greased casserole dish.

4Sprinkle top with rest of bread crumbs and cheese.

5Bake at 350° for 25 minutes.
