- 2 lb. sliced zucchini
- 1/4 c. chopped onion
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. grated carrot
- 1 (8 oz.) pkg. cubed herb stuffing
- 1/4 lb. butter
Directions

1Boil the zucchini and onion in a little water for about 5 minutes.

2Drain.

3Mix soup, sour cream and carrots.

4Melt butter or margarine and mix with stuffing cubes.

5Place half the stuffing mix in bottom of a 13 x 9 x 2-inch casserole dish.

6Mix zucchini and onion with soup, sour cream and carrot mixture.

7Put mixture in casserole dish.

8Top with remaining stuffing mixture.

9Bake for approximately 30 minutes at 350°.
