Zucchini Casserole

  • 2 lb. sliced zucchini
  • 1/4 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. grated carrot
  • 1 (8 oz.) pkg. cubed herb stuffing
  • 1/4 lb. butter

Directions

    Boil the zucchini and onion in a little water for about 5 minutes.

    Drain.

    Mix soup, sour cream and carrots.

    Melt butter or margarine and mix with stuffing cubes.

    Place half the stuffing mix in bottom of a 13 x 9 x 2-inch casserole dish.

    Mix zucchini and onion with soup, sour cream and carrot mixture.

    Put mixture in casserole dish.

    Top with remaining stuffing mixture.

    Bake for approximately 30 minutes at 350°.
