- 4 c. grated zucchini
- 2 large grated carrots
- 2 medium chopped onions
- 1 can cream of mushroom soup
- 1 1/2 sticks margarine
- 1 (8 oz.) pkg. stuffing mix
- 1 (8 oz.) carton sour cream
Directions

1Cook zucchini until half done (do not overcook) for 5 to 10 minutes.

2Salt slightly.

3Drain several times.

4Saute onions in some of margarine.

5Mix onions, carrots, soup, sour cream and zucchini.

6Set aside.

7Melt rest of margarine and pour over stuffing in separate bowl and mix well.

8Butter a 2-quart casserole dish and in layers, start with half of zucchini mixture and then half of stuffing mix.

9Repeat, ending with stuffing on top.

10Bake for 20 minutes at 350°, covered.

11Remove lid and bake additional 10 minutes, uncovered.
