  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 (16 oz.) can whole tomatoes
  • 1 tsp. salt
  • 1 Tbsp. brown sugar
  • 3 or 4 medium zucchini
  • 2/3 c. Parmesan cheese

Directions

    Melt butter.

    Blend in flour.

    Add tomatoes (broken into pieces), salt and sugar.

    Cook 5 minutes until thick.

    Pour over thinly sliced unpeeled zucchini in greased 2-quart casserole. Sprinkle with Parmesan cheese.

    Bake 1 hour at 350°.
