- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 (16 oz.) can whole tomatoes
- 1 tsp. salt
- 1 Tbsp. brown sugar
- 3 or 4 medium zucchini
- 2/3 c. Parmesan cheese
Directions

1Melt butter.

2Blend in flour.

3Add tomatoes (broken into pieces), salt and sugar.

4Cook 5 minutes until thick.

5Pour over thinly sliced unpeeled zucchini in greased 2-quart casserole. Sprinkle with Parmesan cheese.

6Bake 1 hour at 350°.
