Zucchini Casserole

Ingredients

  • 6 small to medium zucchini, sliced 1/4-inch thick
  • 1 medium onion, sliced thin
  • 1 c. grated cheese (more if needed)
  • 2 to 3 sliced tomatoes
  • 1/3 to 1/2 c. melted margarine
  • 2 c. bread crumbs
  • garlic salt to taste
  • salt to taste

Directions

    Saute zucchini until halfway cooked; season to taste.

    Put in a 9 x 13-inch pan.

    Saute onion until soft and transparent; season to taste.

    Layer on top of zucchini.

    Add sliced tomatoes.

    Top with grated cheese.

    Melt margarine and mix with bread crumbs. Sprinkle on top of cheese.

    Bake at 350° for 30 minutes.

    Eat immediately.
