Zucchini Casserole

  • 10 to 12 medium zucchini, peeled and sliced
  • 1 medium onion, sliced
  • 1/4 tsp. oregano
  • 1/4 tsp. Italian seasoning
  • 1/4 tsp. basil leaves
  • 1 clove garlic, diced
  • 4 to 5 tomatoes, cut in half and sliced
  • salt
  • pepper
  • 1 block grated Cheddar cheese

Directions

    In a large skillet, saute zucchini, onion, oregano, Italian seasoning, basil leaves, garlic, salt and pepper until zucchini is tender.

    In a large greased casserole dish, layer zucchini, tomatoes and cheese, making as many layers as you can, ending with cheese.

    Bake in 350° oven for 15 to 20 minutes or until cheese is melted.
