Zucchini Casserole

  • 2 or 3 medium-size zucchini, sliced
  • Crisco shortening
  • 2 beaten eggs
  • 2 Tbsp. water or more
  • 1 (15 oz.) can tomato sauce
  • Parmesan cheese
  • flour

Directions

    Fry zucchini in skillet with shortening until brown (zucchini should be dipped individually in beaten eggs and water mixture, then dipped in flour).

    Layer in 8 x 8-inch pan (or larger, depending on size of zucchini) and put 1 tablespoon of sauce on each piece.

    Between each layer, sprinkle cheese.

    Continue until done, then leftover sauce can be evenly spread over top of zucchini and sprinkle again.

    Bake at 350° for 1/2 hour covered with foil and 15 minutes uncovered.
