Ingredients
- 4 zucchini unpeeled and cut into 1/2 inch slices 6 c
- 3/4 cup shredded carrots
- 1/2 cup chopped onion
- 1/4 cup butter
- 1 cup chicken Stove Top stuffing, flavor, ready seasoned
- 1 can cream of chicken soup undiluted
- 1/2 cup sour cream
- 1/2 cup stuffing mix Stove Top
Directions

1Cook zucchini JUST UNTIL TENDER. Drain. Cook carrots and onions in a LITTLE water for about 5 minutes. Drain. Melt butter in saucepan and add carrots and onions.

2Stir in chicken soup and sour cream and mix in zucchini carefully.

3Mix in 1 cup stuffing mix. Pour into 7x10 inch casserole.

4Sprinkle the 1/2 cup stuffing mix over top and bake at 350 degrees. Bake 30 to 35 minutes uncovered. Use stuffing mix dry as is.
