Zucchini Cheese Casserole(Makes 3 Servings.)

- 2 lb. zucchini, cut in 1/2 inch slices
- 1/2 c. boiling water
- 2 eggs, lightly beaten
- 1 lb. cottage cheese
- 1 c. cooked brown rice
- 1 onion, finely chopped
- salt to taste
- 1/2 tsp. marjoram
- 1 Tbsp. chopped chives
- 1/2 c. grated Parmesan
Directions

1Preheat oven to 350°.

2Boil zucchini 5 minutes; drain.

3(Use liquid in soup.)

4Combine eggs, cottage cheese, rice, onion, salt, marjoram and chives.

5Place 1/2 zucchini in bottom of a buttered casserole.

6Top with 1/2 rice mix, then repeat layers.

7Sprinkle with cheese.

8Bake 45 minutes.
