  • 3 Tbsp. butter or margarine
  • 1 medium onion, thinly sliced
  • 1 clove garlic
  • 2 lb. zucchini, coarsely grated
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 eggs, unbeaten
  • 1/2 c. milk
  • 1/3 c. grated Parmesan cheese
  • 1/2 c. potato chips, coarsely crushed
  • paprika

    Preheat oven to 350°.

    In large skillet melt butter and saute onion

    Cook, covered, 5 to 7 minutes until zucchini is fork-tender. Beat eggs with milk and cheese. Combine zucchini
