- 3 slices bacon, cut into 1-inch pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 small zucchini, sliced
- 4 ripe tomatoes, diced
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 12 cup freshly grated parmesan cheese
Directions

1In a large pan, cook bacon just until fat begins to render and bacon softens.

2Add the onion and garlic and cook until onion is tender.

3Place some zucchini in a single layer across the bottom of pan.

4Top with some tomatoes.

5Repeat layering until all vegetables are in the pan.

6Simmer, covered, on medium-low heat, for 5-10 minutes, then turn vegetables with spatula to brown and cook the other side.

7Top vegetables with marinara sauce and cheeses, and continue to cook, covered, for 5-10 minutes more or until vegetables are tender and cheese is melted.
