  • 4 large zucchini, sliced
  • 1 tsp. salt
  • 3 eggs, beaten
  • 1 c. sour cream
  • 3/4 tsp. seasoned salt
  • 1/4 tsp. pepper
  • 1 c. grated Parmesan cheese
  • 2 Tbsp. butter

Directions

    Salt zucchini, then steam until tender.

    Place in greased casserole dish.

    Mix together eggs, sour cream, seasoned salt, pepper and half of grated cheese.

    Dot with butter and sprinkle with remaining cheese.

    Bake at 400° for 15 minutes or until set.
