- 3/4 c. grated Parmesan cheese
- 2 eggs
- 2 Tbsp. flour
- 1/4 tsp. pepper
- 2 cloves garlic, minced or pressed
- 2 Tbsp. finely chopped parsley
- 1/4 c. milk
- 2 large zucchini
- 1/4 c. oil
Directions

1Beat batter ingredients with wire whip, cover and refrigerate for at least 15 minutes.

2Cut zucchini in half crosswise, then in lengthwise slices about 1/4 inch thick.

3Dust lightly with flour. In large frying pan, heat oil over medium-high heat.

4Dip zucchini slices in batter mixture to coat each side.

5Fry until golden brown on both sides.

6Drain on paper towels.

7Sprinkle with additional Parmesan, if desired, and serve.

8Makes 4 to 6 servings.
