- 2 large zucchini, grated
- 1 tablespoon plus 2 teaspoons olive oil
- 1 garlic clove, thinly sliced
- 1 tablespoon chopped fresh dill
- Salt and pepper
- 1 tablespoon chopped parsley
Directions

1Place the grated zucchini in the middle of a kitchen towel.

2Twist the ends together and squeeze the juices out of the vegetable.

3In a large skillet over medium-high heat, heat the 1 tablespoon of the oil with garlic.

4Saute the zucchini, dill and salt and pepper until tender but still crisp.

5Toss the zucchini with remaining oil and check seasoning.

6Top with parsley.
