  • 6 c. zucchini
  • 1/2 c. lemon juice
  • 6 c. sugar
  • 1 c. drained, crushed pineapple
  • 2 small boxes apricot jello

Directions

    Peel and grate zucchini.

    Boil for 10 minutes, stirring constantly.

    Add sugar, pineapple and lemon juice; boil 6 minutes. Remove from heat, add jello.

    Put in jars or put in refrigerator.
